Cocción del arroz
Arroz con leche is a classic dessert beloved across many Latin American and Spanish households, and making it from scratch truly brings out its rich, comforting flavors. A key tip I’ve learned when preparing arroz con leche is to choose the right rice — long-grain rice, like the one mentioned in the recipe and seen in Lundberg Basmati brands, cooks up tender but keeps its grains separate enough to avoid a gummy texture. When cooking the rice with cinnamon sticks and cloves, it is important to let the water infuse fully before removing the spices. This builds that warm, spiced base flavor crucial to authentic arroz con leche. Don’t rush drying out the rice; stirring carefully and cooking on medium heat helps prevent sticking and breaking the grains. The addition of vanilla essence enhances the dessert’s aromatic profile, making each bite fragrant and inviting. Using both IDEAL® Cremosita (a type of evaporated milk) and Nestlé® condensed milk adds a luxurious creaminess and gentle sweetness, giving the rice pudding its signature satin texture. I also recommend including raisins as they provide bursts of sweetness and texture contrast, elevated further with a dusting of cinnamon powder to finish the dish. For variation, sometimes I add a little lemon or orange zest to brighten the flavors without overpowering the cinnamon and vanilla. Finally, serving arroz con leche slightly warm or chilled allows you to enjoy it in different seasons. This recipe’s scale of 12 servings is perfect for family gatherings or meal prep, making it a convenient dessert option. Overall, the simplicity of ingredients combined with patient cooking techniques results in a traditional, crowd-pleasing arroz con leche that’s worth making on weekends or any day that calls for a comforting sweet treat.
