Step 1: Keep Your Crawfish Alive!

‼️ DO NOT put your crawfish directly on ice—they’ll die.

✅ Instead, put them in a cooler, tilt it, and keep the ice on one side, while the crawfish stay on the bare bottom.

✅ Crack the lid slightly to help circulate air, keeping them cool but not freezing.

Step 2: Prepare Your Boil Water

Before you even grab your crawfish, have all your seasonings chopped and water already boiling!

Base Ingredients (for 5 lbs of crawfish):

🦞 2 gallons chicken broth, 4 tbsp bouillon, 2 yellow onions (chopped), 6 cloves garlic (minced), 4 stalks celery (sliced), 1 bell pepper (cut in 4), 2 sticks unsalted butter, 4 lemons (halved), 2 oranges (halved), 5 bay leaves, 1 tbsp each of thyme, celery seed, mustard seed, coriander, ½ tsp allspice, 1 cup dry white wine, 2 tbsp apple cider vinegar.

Step 3: Seasoning Mix (Adjust to Your Taste).. THIS IS JUST A BASE

2 tbsp cayenne pepper, 1 tbsp smoked paprika, 1 tbsp black pepper, 1 tbsp white pepper, 2 tbsp garlic powder, 2 tbsp onion powder, ½ cup Louisiana or Zatarain’s Crab Boil Seasoning, 1 tbsp red pepper flakes, 2–3 sliced jalapeños or serrano peppers, 3 tbsp kosher salt.

Step 4: Cooking & Soaking

1️⃣ Bring everything to a boil.

2️⃣ Add the crawfish and stir well.

3️⃣ Boil for 3–4 minutes, then turn off the heat and cover.

4️⃣ Let them soak for 1 to 1.5 hours, tasting every 30 minutes. Add seasoning directly to the boil if needed.

5️⃣ Cold plunge: Let them cool for 5 minutes, then do a quick dip in cold water—this helps separate the meat from the shell without overchilling.

🚨 DO NOT keep them in ice water too long. Let the water be warm, not hot, so the osmosis process works best.

Step 5: Final Touch

Before serving, sprinkle extra Cajun seasoning and oregano on top (trust me 👀).

🔥 Adjust the spice & salt to YOUR taste—these are just base measurements! Don’t be modest, because seasoning has to work through the shells!
