Listen, nobody on the internet is capping. This green spaghetti is a 10/10. Matter fact, it’s a 15/10. And I’m a red spaghetti fanatic. It’s just a completely different taste and vibe. It’s so flavorful, and I personally LOVE the background taste of cilantro. I’m a cilantro fan. If you don’t like cilantro, you probably won’t like this dish because cilantro is a pretty powerful herb flavor-wise, but to me? It’s fire.
Authentic jr (my nephew) gave it a 10/10 with zero complaints. My friend’s son (Authentic Mynni) gave it a 10/10 too. The only thing he mentioned was the cilantro taste, but he still said he liked it.

I roasted:
* 3 jalapeños
* 2 habanero peppers
* 4 garlic cloves
* celery
* tomatillos
* onion
I seasoned everything with:
* salt
* pepper
* Cajun seasoning
Then roasted it at 425° for about 15 minutes. I honestly lost track of time, but what you’re really looking for is those charred spots on the vegetables. Not burnt — just roasted and charred. Once you see that, they’re ready.
Then in a blender add:
* all roasted vegetables
* a bunch of cilantro
* a handful of spinach
* 1/2 avocado to 1 whole avocado depending on how creamy you want it (1/2 was perfect for me)
* 1 cup cottage cheese
* 1 cup Greek yogurt
* 1/2 cup mozzarella
* 1/2 cup milk
* juice of 1 lime (or just squeeze lime on top while eating)
* bouillon powder to taste
* garlic powder
* onion powder
* and all the seasonings listed in the video to taste
Also note: this is the HEALTHY version I made. We can always circle back and make the unhealthy version if y’all wanna see that too 😂 but I’m telling y’all right now… this version tastes SO good.
I used protein noodles too, so you’re getting:
* lots of protein
* good bacteria/probiotics from the Greek yogurt & cottage cheese
* and a SUPER filling meal
You can eat a little bit of this and it’ll take you a long way. Plus it’s cheap.
So with the power invested in me, I personally think I accomplished bougie on a budget and I LOVE that for me. This is probably one of the best things I’ve made in a long time.
And to the girl that wanted me to buy her lunch… you buy ME some lunch, show me it’s real, and I’ll eat you off the bone seven days a week 😭 with protein powder on top
