Crack Seasoning:
• 1 ranch packet
• 2 tbsp lemon pepper
• 2 tbsp powdered sugar
If you want it sweeter (like Bando in Atlanta), just add more powdered sugar.
If you want it more savory, keep it exactly as is.
Only adjust the powdered sugar—everything else is perfect
Chicken & Fish Prep:
• Season marinade however you normally do (or use my video seasonings)
• Add to buttermilk (the marinade) and soak 1–24 hours (longer = more flavor)
• Do the same exact process for fish
Coating:
• Chicken: flour + same seasonings
• Fish: flour + cornstarch + cornmeal + same seasonings
Breading process (both):
Marinade → coating → marinade → coating (2 coats total)
Then fry
Mozzarella Sticks:
• Freeze for 1 hour first
• Beat eggs + add hot honey (optional) + season
• Season flour the same way +orengeo, basil, Italian seasoning, Parmesan
• Season breadcrumbs with orgango, basil, Italian seasoning, Parmesan
Breading:
Egg → flour → breadcrumbs → egg → breadcrumbs
Then fry
I've recently experimented with this crack seasoning recipe myself, and I must say, it elevates fried chicken wings to an entirely new level. The blend of ranch seasoning, lemon pepper, and powdered sugar strikes a perfect balance between tangy, savory, and slightly sweet — similar to popular Atlanta-style flavors like Bando's. What I found especially helpful is the flexibility in adjusting the powdered sugar to suit your taste. Adding more creates a sweeter profile that pairs wonderfully with the crispy skin of the chicken, while keeping it minimal makes the taste more savory and classic. I also followed the step-by-step marinating process, soaking my chicken in buttermilk mixed with the seasoning for about 12 hours, which really infused the flavors deeply. For the coating, using a mix of flour and the same seasoning ensures every bite has tremendous flavor. The double-dip breading method — alternating marinade and coating twice — creates that crispy outer layer that locks in juicy tenderness inside. I tried this method not only with chicken but also with fish fillets, adding cornstarch and cornmeal for extra crunch, and it worked amazingly well. As a bonus, I tested the mozzarella sticks breading technique featured here. Freezing the sticks before breading helped them stay intact while frying. The combination of egg mixed with hot honey added a lovely subtle heat and sweetness, while seasoning the flour and breadcrumbs with oregano, basil, Italian herbs, and Parmesan cheese gave a savory twist. Overall, this seasoning and preparation method is a game-changer for anyone looking to upgrade their homemade fried chicken wings, fish, or even mozzarella sticks. It’s practical, versatile, and definitely worth trying out in your kitchen. Don’t hesitate to personalize the seasoning amounts until it perfectly suits your taste buds!
