The Perfect Quick Weeknight Meal
Stop chopping and start blending! This recipe turns fresh aromatics into a silky, flavorful base for ground beef, paired with medium shells that catch every drop of sauce. It’s fast, hearty, and looks like it took hours on the stove.
Ingredients
• The Base: 1 lb Ground Beef (85/15 lean is perfect).
• The Pasta: 1 box (16 oz) Medium Shells.
• The "Blender" Sauce: * 1 Onion, roughly sliced.
• 1 Red bell pepper.
• A large handful of fresh parsley and/or cilantro.
• 2–3 cloves of Garlic.
• 1 jar (24 oz) of your favorite Marinara or tomato sauce.
• Toppings: Freshly grated Parmesan and chopped parsley.
Instructions
1. Prep the Sauce: Throw your onion, pepper, and herbs into the blender. Pulse until finely minced but not quite a smoothie. Pour in your jarred tomato sauce and pulse once more to combine.
2. Brown the Beef: In a large skillet or Dutch oven over medium-high heat, brown the ground beef until fully cooked. Drain any excess grease if necessary.
3. Simmer: Pour the blender sauce over the cooked beef. Stir well and let it simmer for about 10–15 minutes. This cooks out the "raw" edge of the blended onions and lets the flavors marry.
4. Boil the Shells: While the sauce simmers, cook your pasta in salted water until al dente.
5. The Marriage: Using a slotted spoon, transfer the shells directly into the sauce. Toss beautifully until every shell is coated and the sauce is tucked inside the pasta.
6. Finish: Plate it up and go heavy on the Parmesan and fresh herbs. #recipe #shellsandspaghetti #easymeal
When I first tried making this quick weeknight meal, I was amazed at how blending fresh aromatics like onion, bell pepper, garlic, and herbs into the marinara transformed the sauce into something rich and silky without extra chopping or prep time. The medium shell pasta is perfect because its shape holds onto every bit of the sauce, making each bite flavorful and satisfying. Using 85/15 lean ground beef keeps the dish hearty but not greasy, especially after draining the excess fat. One tip I found helpful is to pulse the sauce ingredients just enough to finely mince but not liquefy everything into a smoothie—this balances texture and flavor. Simmering the blended sauce with browned beef lets the flavors meld and softens the raw taste of the vegetables. When cooking the pasta, seasoning the boiling water with ample salt really enhances the overall taste. A favorite finish of mine is topping the plated dish generously with freshly grated Parmesan and chopped fresh parsley. Adding parsley adds a refreshing herbal note that brightens the beef and tomato richness. For variation, cilantro can also add a slightly different herbal flavor if you prefer. I appreciate how this recipe is a nutritious meal option, incorporating vegetables into the sauce and balanced with protein and complex carbs. It’s a great go-to when you want homemade comfort food without spending hours in the kitchen. Plus, because it uses a jar of marinara, it’s easy to customize with your preferred sauce brand or flavor. Giving this a try brought a fresh twist to my weeknight dinners and earned compliments from family who thought it took much longer to prepare!
