I cannot eat chipotle, iykyk🥴... but I had a weird ass craving for it today. Now, this looks nothing like a chipotle bowl lol but it'll do.

I tried to go to Walmart to get grilled chicken strips because I was in the area today, and they had a power outage and told us it would take 30 MINS to reboot all the registers. Soooo, yea I left lol and this must due tonight.

I've been STRUGGLING. My life is in shambles and I'm sad as fuck so the fact I am actually eating is a win today. The fact I got my sad ass up off my sad ass couch and threw some shit in the air fryer and then in a bowl as a meal is a win for me right now.

I'm trying my best. It doesn't feel good enough by far but this is all I got! And hopefully tomorrow is a better day. With a better mood. a better vibe. And a slightly better copy cat chipotle bowl. North Houston

While I often grab chicken strips like my friend tried to, you can easily air-fry some chicken breast or thighs seasoned with your favorite taco or fajita blend. If you're really in a pinch, pre-cooked rotisserie chicken works wonders. Other great options include seasoned ground turkey, black beans for a plant-based twist, or even some crispy pan-fried tofu. Now, for the base. My friend mentioned seasoned potatoes, and honestly, air-fried potatoes are a game-changer! Cut them into small cubes, toss with a bit of olive oil and your favorite spices (paprika, cumin, chili powder, garlic powder are my go-tos), and pop them in the air fryer until golden and crispy. They’re so much better than fries and feel really substantial. If you're looking to cut down on carbs, you could swap the potatoes for cauliflower rice, a mix of shredded lettuce, or even just a bigger bed of fresh greens. Brown rice or quinoa are also fantastic whole-grain options if you have them on hand. Next, load up on those vibrant veggies!
