Hair thin, wine, buckwheat edge, whatever your heart desires they have it! My favorite is the Spicy Numb Chicken Noodle (dry no soup) it’s a kick of spice and mala flavor. In general I don’t like beef noodle soup or Lanzhou hand pulled noodle so by default they aren’t my favorite. How do you like your noodles?

After seeing so many recommendations, I finally made my way to Highland Noodles in Milpitas, and let me tell you, it lives up to the hype, especially if you're on the hunt for those famously widest noodles in the Bay Area! Walking in, the aroma alone was enough to get my taste buds tingling. The menu can be a bit overwhelming with so many choices of hand-pulled noodles that come in a variety of widths. They truly have it all, from hair-thin to extra wide, so there's something for everyone. I've always been a fan of noodles that really grab onto the sauce, and these wide noodles do just that. They have a fantastic chewiness that makes every bite satisfying. My absolute go-to, and what everyone needs to try, is the numb spicy chicken flat noodles (dry, no soup for me!). This dish is an explosion of flavor. The chicken is tender, but the real star is the sauce. It's got that incredible mala taste that leaves your tongue with a pleasant, addictive tingly sensation. It's spicy, but not overwhelmingly so, allowing you to really appreciate the depth of flavor. If you're a fan of Szechuan peppercorns, this is your dish. Beyond the noodles, I also ventured into some of their other popular items mentioned by fellow foodies. The lamb skewers are a must-order side dish. Perfectly grilled, seasoned, and incredibly tender, they disappeared from my plate almost instantly. I also heard great things about their Chinese hamburger, a savory, flaky bun filled with juicy meat, which I'm definitely getting next time! While I personally tend to prefer dry noodles, Highland Noodles also offers a range of delicious noodle soups. I saw many people enjoying the spicy beef flat noodle soup with its tender beef, and the classic Lanzhou hand-pulled beef noodle soup. Even though these aren't my usual preference, they looked incredibly hearty and comforting, especially on a cooler Bay Area day. The broth smelled rich, and the beef looked perfectly cooked. One thing I appreciate about Highland Noodles is the ability to customize your spice level and noodle width. Don't be afraid to ask for recommendations if you're unsure! The staff is usually helpful. It can get pretty busy, especially during peak lunch and dinner hours, so keep that in mind. But honestly, the wait is worth it for these unique and delicious noodles. It's truly a gem in Milpitas for authentic Chinese flavors, and I can confidently say it's one of the best spots for hand-pulled noodles I've found in the Bay Area.
