To make this delicious bread, you need: 1½ cups of warm water, a spoonful of sugar, a pinch of salt, and two tablespoons of yeast. Mix these ingredients well and let the mixture sit for ten minutes to activate the yeast. Then, add four cups of flour and knead for ten minutes; the dough should be soft and slightly sticky—do not add extra flour or oil. Let the dough rise for an hour and a half. Afterward, shape it into small balls and let them rest for another ten minutes. Then, roll them out into circles—not too thin, but of medium thickness—cover with a clean towel, and let rest for fifteen minutes. Preheat the oven to 500°F (260°C) with the baking tray inside. Turn on only the top broiler, place the bread on the very hot tray, and position it on the rack closest to the broiler. Wait for the bread to puff up and toast slightly, then flip it over. The secret to keeping this bread soft—even when stored and reheated later—is to brush the surface with a mixture of milk and flour immediately after removing it from the oven while it is still hot; then, let it cool completely in the open air before eating.
