Quick and easy salmon bowl

SALAD
Use your salad base of choice, I used “Attitude Salad Spring Mix”
SALMON
For salmon, season to your liking (olive oil, old bay, paprika, Cajun seasoning, onion and garlic powder, black pepper, salt)
Let it marinate for a bit then pop it In the air fryer for about 10-15 minutes, or until crispy
DRESSING
Home made pesto sauce/ dressing
basil
Pine nuts
Parmesan cheese
Olive oil
Salt & pepper
Garlic ( 1-2 cloves)
Soak your basil in hot water for about 1 minute to activate the colour (chlorophyll) then soak it in cold ice water for about 1 minute and then squeeze out as much water as possible.
Next toast your pine nuts on the stove top for about 1-2 minutes.
Then pop EVERYTHING in a blender or food processor and once combined you have a delicious homemade pesto sauce that you can literally use on anything 👌🏽
Now it’s time to assemble your bowl; place salad first then salmon on top, sprinkle some Parmesan cheese and top with your pesto sauce and ENJOY 🤤
