I really went all out and did some rebel canning and made 6 jars of Alfredo sauce last November (2023)! Going by the alphabet agencies guidelines you can NOT can dairy products. But rebel canning you CAN can whatever you want while knowing the possible "risks". As long as your jars ping, there's no mold when you open your jars, and it doesn't smell rotten, you can eat it! Sooo rebel on!! I used 2 sticks garlic and herb butter, 2 quarts heavy cream, 16oz cream cheese, and seasonings. It came out so good and I still have 2 jars left that I made from this batch last year. I ate it throughout my pregnancy with my latest child too that I just had in August and had no issues. *Please do NOT attempt to do this without the necessary and proper equipment and protocols associated with rebel canning!!
