Farm to table chicken broth
My poor 7 month old baby girl has a terrible chest cold… I feel absolutely beyond awful about it too. Tonight, she had to be taken by ambulance to the ER bc her temp spiked and wasn’t breathing well, she was getting very yellow/gray in color and her poor little chubby hands were so blue and cold and clammy. She was in such rough shape. She is back home now, my husband is staying with her at the hospital and I stayed back with our 4 year old and 15 year old. We all decided to make sweet little Gia some chicken broth for her to drink when it’s ready tomorrow. We used one of our roosters we dispatched yesterday. I will be making the veggies into a puree for her as well. I’m going to save the bones and skin to make a bone broth with at a later date and I’ll also be canning this broth to keep in the pantry too.
2.5-3 lb chicken
4 carrots
3 stalks celery
1 onion (with skin on)
Garlic to taste (with skin on)
Fresh rosemary and thyme to taste
Ginger to taste
Enough water to just cover chicken
I did not add salt bc Gia doesn’t need excess sodium in her diet at 7 months old and I also didn’t add peppercorns like I usually do. I opted for ginger instead to give it that bite pepper does but ginger bc it has more health benefits for when sickness occurs.
