Chicken bites:

Ground chicken 1 lb

Cooked tri colored quinoa 1/2 cup

Shredded carrots cooked

Diced onion cooked

Seasonings of choice I used garlic powder onion powder and paprika

Egg 1

Mix everything together and form into size appropriate portions. Bake at 350° for 25 mins.

I served this with my daughters favorite veggies and fruit.
