Tomato (bc I had one laying around and wanted to use it before it went bad. I don’t normally put it in my eggplant parm)

Combine breadcrumbs, Roasted garlic and herb seasoning, salt, pepper, and Italian seasoning. Whisk eggs. Dredge eggplant rounds in egg then in seasoned breadcrumbs. Heat oil in pan with thyme. Fry breaded eggplant for 2 mins / side. Set aside. Layer sauce on bottom, eggplant, tomato, basil, mozzarella cheese, repeat. Top with sauce and roasted garlic, tomato and basil cheese and baked at 400° for 25-30 mins.
