Baked Blueberry Cheese Cupcake 👌🏻😋

Crust:

2 cups Crushed Graham or similar crackers

2 Tbsp Granulated Sugar

1/4 cup or 4 tbsp melted butter

1 Tsp Cinnamon or lemon zest (optional)

Cheesecake:

2 packs (16 oz) Cream cheese

1/2 or 3/4 cup Sugar (depending on your taste or preference)

1 pack (250 ml) Nestlé All purpose cream, chilled

2 Tbsp Flour

2 Eggs at room temperature

3 tbsp or half of lemon juice

Toppings:

Canned blueberries

Makes about 24 cupcakes

Procedure:

1. Preheat oven to 170 C. Line cupcake tins with paper liners.

2. Mix all ingredients for crust until well combined. Press firmly 1 tbsp of the mixture into the cupcake liner. You may use the bottom of 1/4 measuring cup for ease of use. Set aside.

3. Beat cream cheese until soft and fluffy. Add sugar and lemon juice and continue beating until smooth. Add one egg at a time, beating after each addition. Add all purpose cream and flour and beat until creamy and lump free.

4. Spoon 3 tbsp or fill 3/4 full of cheesecake batter into each cupcake liner.

5. Bake for 15 to 20 minutes.

6. Allow the cuppies to cool completely.

7. Top each one with 1 Tbsp of blueberry topping. Refrigerate before serving to set completely.
