I had a craving tonight so I whipped up a little something 😏

I had some berries in the fridge already macerated. I spooned a bit into my cute little Pampered Chef cast iron skillet (these 5.5 inch skillets are brand new btw!) Then I topped with just a little instant pancake batter.... Just enough to coat the berries. Placed in my Deluxe Air Fryer on the middle shelf and set to air fry (400°) for 12 minutes. Let cool and topped with vanilla ice cream 😍

I recently tried creating a berry-based dessert that turned out to be both simple and indulgent. Starting with macerated berries gives the dessert a lovely juicy and flavorful base. The slight sweetness and natural juices from the berries help keep the dish moist and vibrant. Using a small cast iron skillet, particularly a 5.5 inch size like the Pampered Chef one, really helps create an evenly cooked, crispy crust for the pancake batter layer that tops the berries. This method also brings out the cast iron’s excellent heat retention qualities, giving the dessert a nicely browned finish. I mixed just enough instant pancake batter to lightly coat the berries—as too much batter would overpower the fruit. Setting the air fryer to 400°F and cooking for about 12 minutes allows the batter to firm up and cook through without drying out, while the berries soften beautifully underneath. Cooling the dessert briefly is key before adding the finishing touch: a scoop of creamy homemade vanilla ice cream. The cold ice cream melting into the warm berry and pancake mixture creates a perfect harmony of flavors and textures. It’s comforting and refreshing all at once. If you don’t have instant pancake batter handy, you could also experiment with other quick batter options or even biscuit dough for different textures. The air fryer’s convenience makes this dessert versatile and easy to customize. Pairing this with other fresh fruits or a drizzle of honey or maple syrup can elevate the experience. Overall, this dessert has become my go-to quick treat for satisfying cravings without complicated prep or baking.
