Pan seared ribeye topped with chimichurri sauce + crispy kale and fries 🥩🥗🍟
What you’ll need
Steak
- 2 ribeye steaks
- salt
- pepper
- 4 tbsp butter
- 4 garlic cloves
- fresh thyme or rosemary
chimichurri sauce
- 1/3 c fresh parsley chopped fine
- 1 (big) tbsp minced garlic
- 1/2 tsp dried oregano
- 1/4 c olive oil
- 1 tbsp red wine vinegar
Fries
- 4 russet or large golden potatoes (skinned)
- avocado oil
- salt
Crispy kale
- kale
- salt
- pepper
- garlic powder
- Italian seasoning
- avocado oil
1. Start by preheating your oven to 400 and begin prepping fries. Skin and chop your potatoes in a thin fry shape and place in a ice bath while you begin on the rest of dinner.
2. Season steaks with salt and pepper and set to the side. Season kale with salt, pepper, garlic powder, Italian seasoning, and coat with avocado oil. Mix kale, seasonings, and oil with your hands until evenly coated. Place in the oven for 15- 20 minutes.
3. Take fries out of ice bath and pat dry. Over medium high heat, cook fries until golden brown - flipping frequently. Once done, place on a drying rack and season with salt.
4. Heat avocado oil in a small skillet over medium high heat and wait for oil to get hot. Place steak on hot skillet and cook for 2 minutes without touching. Flip and repeat on the other side.
5. Turn heat off and add butter, garlic cloves, and thyme. Bast steak for 30 seconds. Set steak to the side and let sit for 5 minutes before cutting.
6. To make chimichurri sauce combine fresh parsley, minced garlic, dried oregano, olive oil, and red wine vinegar.
