Marry Me Chicken Soup!!!
What you’ll need:
- 1 rotisserie chicken (shredded)
- 1 box of pasta (I used shells)
- (2) 32 oz boxes of chicken broth
- 1 c heavy whipping cream
- 3 large tbsp tomato paste
- 1 large handful of spinach
- minced garlic
- 1 diced sweet onion
- 2 tbsp minced garlic
- 1 jar or julienne cut Sundried tomatoes
- 1/2 tsp salt
- 1 tsp Italian seasoning
- pinch of red pepper flakes
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
1. Start by adding oil from Sundried tomatoes jar to a large pot or dutch oven
2. Once oil is hot - add the diced sweet onion and minced garlic. Sauté until fragrant and onion become translucent
3. Add Sundried tomatoes and tomato paste and allow to cook for a couple minutes all together.
4. Add both boxes of chicken broth and seasonings and allow to come to a slow boil.
5. Once broth is boiling, add noodles and cook for 8 minutes or until pasta is done
6. Once pasta is done - add shredded chicken and spinach. Stir until well combined and spinach is wilted.
