115g softened butter
75g white sugar
65g brown sugar
1 egg
1 tsp vanilla
100g grated carrots (1 medium carrot)
190g flour
3g cinnamon (grounded/powder)
3g baking soda
Frosting (can frost 6 - 8 cookies, x2 if frosting entire batch / preference): 80g softened cream cheese, 30g softened butter, 150g sifted icing sugar, 15ml milk (to adjust based on desired consistency)
Steps
1. Cream together butter and two sugars
2. Whisk in egg
3. Then, whisk in vanilla and carrots
4. Whisk in flour, cinnamon and baking soda
5. Bake at 180C for 13 - 15 minutes until golden brown
6. For frosting, cream together all the ingredients at medium sped
7. Frost cookies after they have cooled. Draw with icing sugar glaze if desired and top with nuts!
