Recipe - Crisp Coffee Butter Cookies ☕️🍪😋
[Recipe] Light, crunchy and buttery, these Crisp Coffee Butter Cookies come with a fragrant aroma that makes sure you can't stop at one ☕️🍪😋 Make sure to unmute to listen to how crispy they are!
The best part? All you need is 5 ingredients, no egg needed at all too, making it friendly for vegetarians 😊 I tend to prefer stronger coffee notes and as such, I used espresso. However, you can adjust the amount of coffee according to your liking!
Ingredients (Makes at least 30, feel free to double)
- 1/2 Cup or 115g Unsalted Butter, Softened at Room Temp
- 1/3 Cup + 2 Tsp or 45g of Icing Sugar, sift if clumpy
Pinch of salt, to taste / optional
- 1.5 Tsp of Coffee / Espresso Granules dissolved in 1 Tsp Hot Water
- 1 Tsp or 5ml of Vanilla Essence
- 1 Cup + 3 Tbsp or 145g of Plain Flour, sift if clumpy
Instructions
1. Dissolve the coffee or espresso granules in hot water. Set aside.
2. In a large bowl, cream together softened butter and icing sugar until light and fluffy, approx 2 mins.
3. Mix in the salt, vanilla essence, and coffee.
4. Fold in the flour until a dough is formed. Transfer to a piping bag with a desired tip and pipe on a non-stick baking tray without parchment paper. Refrigerate for 5 – 10 minutes if its too soft.
5. Bake at 160C for 18 minutes until crispy. The cookies will be nicely golden brown.
6. Serve and enjoy! Do let it cool completely before storing in an airtight container.

I've learnt if I want it creamier, I can add milk powder and to adjust the recipe, substitute into the flour eg want to add 3 teaspoon milk powder, lessen flour by 3 teaspoon. 🙂
