[Recipe] Lower Sugar Butter Cake 🧈🍰 At least 2/3 less sugar, still nicely fluffy and buttery! A sign you should make this is if your parents’ first response to dessert is “too sweet”, this recipe is for them, and perhaps yours too!
This butter cake uses only 65g of added sugar for the entire cake, approximately 63% less than my original recipe. It's actually not as simple as just removing the sugar, I rebalanced the other ingredients so that it remains soft, buttery and moist, with a lovely close crumb 😋
It’s deliberately only lightly sweet, allowing the butter, milk and vanilla flavours to come through more prominently. The kind of simple, comforting cake I would happily serve the family with their coffee ☕️

Ingredients
- 190g Butter, softened at room temp (or 170g butter, with 20g oil added with the milk step if you’re storing it longer)
- 65g of Granulated White Sugar
- 3 Large Eggs, approx 55g, weighed inclusive of shell
- 5ml of Vanilla Essence
- 80g of Milk, room temp
- (Optional) Orange or Lemon Zest
- 190g of Plain Flour, sifted
- 4g of Baking Powder, sifted
Instructions
1. In a large bowl, beat the butter for 2 minutes at low speed. Then, cream together with the sugar for another 2 minutes.
2. Next, whisk in the eggs one at a time until combined.
3. Add in the remaining ingredients (vanilla, milk, plain flour, baking powder) and whisk at low speed until combined. Do not overmix.
4. Transfer the batter to a 7 inch round tray and bake 170C in a pre-heated oven for 45 – 48 minutes until nicely golden brown.
5. Slice when cooled.
