Read moreThis fall soup recipe beautifully combines nutritious ingredients like lentils, ground beef, carrots, and sweet potatoes to create a hearty and warming meal that's perfect for chilly autumn days. Lentils are an excellent source of plant-based protein and fiber, which help keep you full and support digestive health. The addition of ground beef brings in rich flavor and essential iron, making the soup satisfying and balanced. Seasoning plays a crucial role in elevating the taste of this soup. Using beef bouillon cubes infuses a deep, savory flavor, while onion powder and freshly chopped garlic add aromatic depth. For a subtle kick, cayenne pepper is added, which can be adjusted to your preferred spice level. Salt and pepper are fundamental in enhancing all the natural flavors. To make this soup even more nourishing, consider adding other fall vegetables like diced butternut squash or parsnips. Simmering all ingredients for 15-20 minutes ensures the lentils and vegetables are tender yet retain their texture. Using 5.5 cups of water creates a soup that isn’t too thick and allows the flavors to meld beautifully. This recipe is perfect for meal prepping — it stores well in the fridge and flavors develop further overnight. Serve with a slice of crusty bread for a complete meal. For those looking to reduce meat or turn it into a vegetarian dish, substituting the ground beef with mushrooms or additional lentils works wonderfully and adds a delightful umami flavor. Overall, this fall soup is more than just a recipe; it's a comforting bowl of goodness that nourishes and warms you through the season. Enjoy experimenting with the seasonings to find your perfect balance, making it your go-to fall soup every year.
