Pour into bar molds, coat evenly, tap to release bubbles, and pour out excess. Let set to form shells. Make the Honey-Almond Nougat Layer Toast and chop 200 g blanched almonds. In a saucepan, heat 100 g honey + 75 g glucose syrup (or corn syrup) + 150 g granulated sugar until 145°C (soft crack stage). While heating, whip 2 egg whites with a pinch of salt to soft peaks. Slowly drizzle the hot syrup into the egg whites while continuously whipping, creating a fluffy nougat. Fold in the toasted almonds. Spread a thin nougat layer into each chocolate shell. Build the Almond Crunch Layer Mix 150 g feuilletine (crispy flakes) + 100 g almond or almond-hazelnut praline paste + 50 g toasted chopped almonds. Spread evenly over the nougat layer, pressing lightly to compact. Seal the Bars Re-temper remaining saffron-infused white chocolate. Pour over the nougat and crunch layers, scraping molds clean for a smooth finish. Chill until fully set, then carefully demold.
