It’s not just a soup; it’s an experience, especially with those perfectly sliced onions and tender chicken pieces simmering in a truly savory broth. For anyone looking to dive into authentic Belizean food, Escabeche is a must-try. It's essentially a tangy, savory soup, often made with chicken, that gets its distinctive flavor from vinegar, onions, and a blend of spices. When I make chicken escabeche Belize style at home, I always start by marinating the chicken pieces in a little vinegar and spices. This really helps the flavors penetrate.
