私自身も会員制の高級鮨店を何軒か利用した経験がありますが、「鮨りかく」のように路地裏にひっそりと佇む店舗は、まさに隠れ家のような魅力があります。特に印象的だったのは、鰯のつみれ椀に使用された一本分の鰯が、梅肉と絡み合い絶妙に調和していたことです。こうした一品一品へのこだわりは、完全会員制ならではの丁寧なおもてなしの表れであると感じました。 また、クジラ尾の身はA5ランクの牛肉よりも高価と聞いて驚きました。ポン酢ベースの味付けと花山椒の爽やかな辛味が絶妙にマッチし、柔らかさとコクが口の中に広がる体験はここでしか味わえない贅沢です。鮎並の塩焼きに添えられた蕗のとう入り土佐酢は、春の訪れを感じさせる季節感と苦味が味のアクセントになっており、他の素材にない鮮やかさを演出していました。 握りに使われた青森県尻労産マグロの中トロは脂の乗りが程良く、重すぎず旨味がしっかりと感じられて特に印象に残っています。個人的には、こうした地元産の高品質素材を使うことが、江戸前鮨の真髄と言えると感じました。店内の暗めの照明とカウンター席の落ち着きは、まさに大人の贅沢時間にぴったりで、個室もあるためプライベートな会食にも最適です。 価格は決して庶民的ではありませんが、鮨のクオリティと接客、店の雰囲気を考えると、全てに対して妥協のない極上の体験が約束されていると言っても過言ではありません。もし会員になる道があるならば、特別な日のご褒美や大切な方との記念日にぜひ訪れたい一軒です。完全会員制のため敷居は高いですが、リピーターも多く予約も難しいと聞きますので、気になる方は早めの問い合わせが良いでしょう。 「どれも絶品」と言われている通り、食材の組み合わせや盛り付けにも熟練の技が光るため、鮨好きな人はもちろん、食通の方にも強くおすすめしたいお店です。
