And when it comes to grilling, nothing beats the satisfaction of perfectly cooked chicken skewers. My original post was just a glimpse, but I wanted to dive deeper into how I get those incredible golden-brown, seasoned chicken skewers with those irresistible char marks, fresh off the BBQ grate, every single time. If you’ve ever wondered how to make your grilled chicken truly unforgettable, or if your skewers sometimes come out a little dry, keep reading, because I’m about to spill my secrets! First things first, the marinade. This is where the magic truly begins. You don't need anything fancy, just a few key ingredients that infuse so much flavor. My go-to simple marinade includes: ½ cup olive oil ¼ cup fresh lemon juice (this tenderizes the chicken beautifully!) 4-5 cloves of minced garlic 1 tablespoon dried oregano or mixed Italian herbs 1 teaspoon smoked paprika (for color and depth) Salt and freshly ground black pepper to taste A pinch of red pepper flakes if you like a little kick Whisk all these together in a bowl. For the chicken, I usually use boneless, skinless chicken thighs or breasts cut into 1-inch pieces. Thighs stay juicier, but breasts are great too if you're careful not to overcook them. Toss the chicken in the marinade, making sure every piece is coated. Cover it and let it chill in the fridge for at least 30 minutes, but ideally 2-4 hours. You can even prep this the night before for maximum flavor! Now for skewering! If you're using wooden skewers, remember to soak them in water for at least 30 minutes before threading the chicken. This prevents them from burning on the grill. I like to alternate chicken pieces with colorful veggies like bell peppers, red onion, and cherry tomatoes. It makes them look fantastic and adds extra flavor and nutrition. Don't overcrowd the skewers; leave a little space between the pieces for even cooking. Grilling time! Preheat your grill to a medium-high heat (around 400-450°F or 200-230°C). Clean your black BBQ grate thoroughly with a wire brush, then lightly oil it. This is crucial for preventing the chicken from sticking and helps achieve those beautiful char marks. Place the skewers on the hot grill. Cook for about 2-3 minutes per side, turning them every few minutes until all sides are cooked and have that gorgeous golden-brown color and slight char. The total cooking time will be around 10-15 minutes, depending on the thickness of your chicken pieces and your grill's heat. How do you know when they're done? The best way is to use a meat thermometer. Chicken should reach an internal temperature of 165°F (74°C). If you don't have one, cut into a thicker piece; the juices should run clear, and the meat should be opaque throughout. Once cooked, transfer the skewers to a clean plate, cover loosely with foil, and let them rest for 5 minutes. This allows the juices to redistribute, ensuring your chicken stays tender and moist. These grilled chicken skewers are fantastic served with a fresh green salad, some fluffy rice, or even tucked into warm pita bread with a dollop of tzatziki. Trust me, once you master these, your grill will become your favorite kitchen appliance too! Enjoy!
