Ramadan is a special time for family, reflection, and enjoying wholesome meals after a day of fasting. On the 8th day of Ramadan, I prepared a comforting iftar featuring a traditional dish called fatah with eggplant, paired with crispy chicken wings and warm lentil soup. Fatteh is a beloved Middle Eastern dish made by layering toasted bread, lentils or chickpeas, yogurt, and flavorful toppings. Adding eggplant gives it a rich texture and smoky flavor that complements the crispy wings perfectly. Lentil soup, a staple during Ramadan, is not only nutritious but also helps replenish energy and hydration after fasting. Preparing this meal was a joyful and quick process. I started by seasoning the wings with spices, frying fresh bread cubes and eggplant slices to create the base for the fatah. Cooking lentil soup on the stove filled the kitchen with comforting aromas. Once everything was ready, I layered the components and topped the dish with tender meat, capturing a perfect balance of flavors. After breaking the fast with this delicious iftar, I treated myself to freshly made qatayef, a sweet pastry popular during Ramadan, and enjoyed a peaceful evening with my favorite TV show and a cup of green coffee. This combination of savory and sweet delights truly made the day special.
