Gluten free sub today 🥪

I try to follow my recommended diet which means I can’t eat gluten, I found out I had celiac disease a while back and it’s very hard to stay on track when you love carbs.

I’d rather use spinach wraps for my subs, but sometimes you improvise!

Still yummy 😋

... Read moreYou know how sometimes you just feel it? That dullness, the bloating, the feeling your face looks a bit puffy? That's what many people, including myself, have come to call 'gluten face.' Before I was diagnosed with celiac disease, I just thought it was normal to feel constantly tired, have a foggy brain, and sometimes wake up with a puffy complexion. I loved my carbs – pasta, bread, you name it – and honestly, I never connected these symptoms to what I was eating. When you're constantly feeling off, it's easy to just accept it as 'your normal,' but deep down, I knew something wasn't quite right. Discovering I had celiac disease was a huge turning point. It explained *so much*. Suddenly, those mysterious aches, the persistent fatigue, and yes, that recurring 'gluten face' feeling all made sense. It wasn't just my imagination; my body was reacting intensely to gluten. The 'before' was a constant battle against inflammation, both internally and sometimes visibly. My energy levels were always low, and my skin often felt irritated or looked less vibrant. I'd sometimes look in the mirror and just feel a sense of dullness, not recognizing the lively person I knew I could be. The 'after' of going strictly gluten-free has been nothing short of transformative. It wasn't easy, especially at first. Giving up my favorite comfort foods felt like a huge sacrifice. I remember thinking, 'How will I ever enjoy eating out again?' or 'What about all my favorite carb-heavy treats?' But the changes I experienced were undeniable. Within weeks, the bloating started to subside dramatically. My skin began to clear up, and that persistent puffiness in my face? It gradually disappeared, replaced by a clearer, more vibrant complexion. More importantly, my energy levels soared, and the brain fog lifted. It was like I finally got my sparkle back! I felt lighter, more alert, and truly healthier from the inside out. Now, sticking to a gluten-free diet is second nature. It's about making smart choices and finding delicious alternatives, like the amazing gluten-free sub sandwich I had today. Who says you have to miss out? This one, loaded with sliced meat and crisp shredded lettuce on a delicious light brown bun, served with crunchy pickle spears, was absolutely perfect. Sometimes I opt for spinach wraps for variety, but having a good bun option that tastes great is a game-changer when you're craving that classic sub experience. It makes staying on track so much easier and more enjoyable. If you're struggling with similar symptoms and suspect gluten might be an issue, please talk to your doctor or a nutritionist. Getting a proper diagnosis and guidance is crucial. But from my personal journey, embracing a gluten-free lifestyle, especially with celiac disease, can truly make a difference, not just in how you feel, but even in how you look. It's more than just a diet; it's a path to feeling your best, inside and out. It’s hard to stay on track when you love carbs, but finding yummy alternatives like this sub makes it so much easier and totally worth it for that 'after' glow and overall well-being!
