Let’s make homemade tomato soup!

The weather has cooled back off here in Tennessee! So let’s make soup! Tomato soup is so easy I used to eat it from a can and have a stomach ache for days. Now a days I make it myself with healthy easy ingredients.

So let's get to it! Chop up tomatoes of your choice I usually mix 2-4 kinds but it really depends on you and what's in season. I prefer heirloom tomatoes from my local produce store.

Next throw some carrots, purple onion, garlic gloves and rosemary in a pan. I don't measure really but if I was guessing I would say 4-5 full size tomatoes, 5-10 garlic cloves, 1 medium onion, and 3-4 sprigs of rosemary and half a cup of carrots . Throw these in a pan and salt well. Cover with a good quality olive oil and bake at 400 until vegetables are completely cooked down and tender/ very soft. We don't want chunky soup.

Once done blend until smooth and add in 1 cup of heavy cream and mix well! Enjoy with a grilled cheese.
