Dinner in 35 mins or less! Instapot edition
Alright y'all! Let's get to it! Now this is for my instapot
girlies cause I have 2 and don't know what I would do without them!
Grab some of that butter and turn the instapot on sauté.
Put it in and wait until it melts and is bubbley. Throw in 3 minced garlic cloves, 1 onion chopped, a couple of pieces of FRESH rosemary and tyme. Let this cook until fragrant and onions are soft. Once it is place the beef roast in and sear on each side. Once you have a good sear take it out and add in beef broth (around 3-4 cups) rubbing the bottom to help get the flavor incorporate with a RUBBER spatula so you don't scrape your instapot insert. Once you do this add the meat back in along with veggies of your choice. Pressure cook for 20-25 mins depending on size.
Then enjoy! Please excuse no finished meat picture! When you make it in a instapot it will fall apart! I was taking the fat off and totally forgot to get a picture! We were hungry!
(OPTIONAL: I added cornstarch and water to a bowl to make a slurry to thicken you don't have to but we enjoyed!)
