A meal for when you don’t want to cook: Taco Salad
This is one of my go-to meals to make when I don’t feel like cooking + it’s so delish🌮
Ingredients:
✨1 lb ground beef (or you can use ground turkey)
✨1 packet of taco seasoning (or 2 TBSP of seasoning + 3/4 C of water for every pound of meat)
✨Rice (any kind of your choosing - I actually liked this better with my homemade Mexican rice rather than this cilantro lime rice)
✨lettuce (I used romaine)
✨pico de gallo
✨shredded cheese (any kind of your choosing - I used Monterey Jack bc that’s what I had)
✨Chipotle ranch (I mixed together ranch and chipotle seasoning)
✨Optional - tortilla chips or tortilla for dipping; any other toppings you’d like in your taco salad!
Directions:
1. Cook taco meat until cooked through.
2. Add in your seasoning and let it simmer until it becomes thick.
3. Add your lettuce to the bowl then add your meat, rice, other toppings, and dressing.
4. Mix and enjoy!
Taco salad is not just a simple meal; it’s a customizable culinary experience! You can easily switch out ground beef for ground turkey or create a vegetarian version using beans. The key to a great taco salad lies in fresh ingredients. Consider using homemade pico de gallo, which enhances the flavor profile significantly. If you're looking for a bit of crunch, adding some crushed tortilla chips on top can bring the perfect texture contrast to your salad.
