Makes: 1 dozen

2 pkg. active dry yeast

2tbsp. Sugar

2 cups warm milk (115)

2 large eggs

2tsp. Salt

7 1/2 cups all purpose flour

2 cups shredded cheese (cheddar)

1/4 cup chopped seeded jalapeƱo peppers

1) In a large bowl, dissolve yeast and sugar in warm milk. Add the eggs, salt and 4 cups flour. Beat on medium speed for 3 minutes. Add cheese and jalapeno. Stir in enough of the remaining flour to form a firm dough.

2) Turn dough onto a floured surface; knead until smooth and elastic, 6–8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise until doubled in size (about an hour)

3) Punch dough down. Turn onto a lightly floured surface and divide into 12 pieces. Shape into rolls and place 3 inches apart on a lightly greased baking sheet. Cover and let rise for about 30 minutes

4) make an egg wash (1 egg, 2 tsp. water) to brush over rolls. Bake at 375 for about 16-20 minutes. Remove from pans to a wire rack to set and serve warm!
