recipe (serves 3–4):
1 lb yellow potatoes, chunked
1 can chickpeas, drained + rinsed
1 sweet onion, wedges
1 bell pepper, sliced
1 zucchini, cut into chunks
1 cup cherry tomatoes, whole
6 garlic cloves, smashed in skin
2 tbsp olive oil
1 tsp smoked paprika, 1 tsp cumin, salt + pepper + chili flakes
toss everything on a sheet pan, roast at 425°F / 220°C for 30-35 min (flip halfway).
cilantro lime tahini drizzle:
blend ¼ cup tahini, juice of 1 lime, 1 clove garlic, handful cilantro, 1 tsp maple syrup, pinch salt, + 2 tbsp water (or more) until creamy.
