Homemade Pimento Cheese Squares
Ingredients:
- 1 (4 oz) jar diced pimentos
- 1 tsp ground mustard
- ½ tsp chili flakes
- 1.5 cups all-purpose flour
- 2.5 cups finely shredded sharp cheddar cheese
- ½ cup olive oil
- 1 tsp salt
Instructions:
1. Preheat the oven to 350°F. Line baking sheets with parchment paper .
2. Drain the pimentos and pat them dry with a paper towel. Chop them finely and set aside .
3. In a bowl, combine the flour, ground mustard, and chili flakes. Add the chopped pimentos and mix to coat .
4. In another bowl, beat the shredded cheese, olive oil, and salt until well combined. Add the flour mixture and mix until just combined. Knead slightly with your hands to evenly distribute the pimentos .
5. Lightly flour your surface and divide the dough into two equal portions. Roll out one portion at a time to ⅛-inch thickness. Use a cookie cutter to shape the dough as desired .
6. Place the shapes ½ inch apart on the prepared baking sheets. Bake for 15–20 minutes (17 minutes gives perfect crispiness). Cool on a wire rack before storing .
7. Once completely cooled, store in an airtight container .
Notes:
- These snacks stay fresh for up to a week at room temperature. In warmer climates, store them in the refrigerator. Reheat in a toaster oven and let cool before serving
