Keto Cranberry Almond Macaroons
INGREDIENT:
Macrons:
¾ cup heavy whipping cream
½ cup powdered swerve sweetener
1 teaspoon extract of almond
¼ teaspoon xanthan gum
Two cups shredded coconut (unsweetened)
2 large egg whites
1/8 teaspoon salt
½ cup Sugar-free Dried Cranberries (chopped)
½ cup sliced Almonds
Chocolate dip:
2 ½ ounce dark chocolate chips, sugar-free (Chopped)
½ ounce cocoa butter (2 tsp. coconut oil)
INGREDIENT NOTES:
HEAVY WHIPPING CREAM:
I use heavy whipping cream in these cranberry almond macrons. We can use coconut cream to make it free from dairy.
POWDERED SWEETENER:
I use swerve sweetener in this recipe.
ALMOND EXTRACT:
I use the extract of almond because this is a cranberry almond macron. You can use vanilla or coconut extract as well.
XANTHAN GUM:
I use xanthan gum to thicken the cream and it also binds.
INSTRUCTIONS:
For the macrons:
Put the oven to heat at 325 degrees F.
Put the baking sheet in the baking tray and set it aside.
Take a bowl (large) and put it on heat (medium).
Include the ¾ cup of heavy cream and simmer it.
Decrease the heat (medium-low) and wait for it to reduce & become slightly thick (simmer for about 5 minutes).
Add the ½ cup sweetener and 1 teaspoon of almond extract and mix with the whisk.
Dust ¼ teaspoon of xanthan gum over the mixture and mix strongly to combine.
Add 2 cups of shredded coconut mix it and put the bowl aside.
Take the other bowl (large) and add egg whites of 2 large eggs and 1/8 teaspoon of salt.
Beat it until stiff peaks form.
Pour the mixture (coconut) to the egg (whites) and fold it softly.
Add the dried cranberries and almonds and softly fold it again.
Take a rounded teaspoon put the mixture in it and place it on the sheet (baking) one by one.
Bake the macrons for a few minutes (25 minutes).
Remove the tray and set it to chill.
Chocolate dip:
Take a bowl (heatproof) and set it as a double boiler method.
Add the chocolate and cocoa butter and stir it to melt and form a smooth consistency.
When the macrons cool down, dip each macron in the chocolate sauce and put it on the wax paper.
Put the macrons in the refrigerator to set it for about 20 minutes.
Your Keto Cranberry Almond Macaroons are ready to serve.
TIPS:
You can add any other extract like extract of vanilla as well.

Remove the macrons from the oven when they get a brown color.
Allow the macrons to cool down completely before dipping in the chocolate.
