These dreamy strawberry yogurt clusters are dipped in rich dark chocolate and topped with a crunch—perfect for your keto sweet fix! Easy to make, freezer-friendly, and kid-approved.
Ingredients:
1 cup chopped fresh strawberries (keep chunks small)
3/4 cup full-fat Greek yogurt (unsweetened)
1 tbsp keto sweetener (like allulose or erythritol) – optional
1/2 tsp vanilla extract
1 1/4 cup sugar-free dark chocolate chips (Lily's or ChocZero)
1 tbsp coconut oil
2 tbsp crushed roasted peanuts or keto granola (for topping)
Instructions:
Mix the Filling:
In a bowl, combine the chopped strawberries, Greek yogurt, vanilla, and sweetener if using. Stir until just combined—don’t overmix to keep some texture.
Form Clusters:
Line a tray with parchment paper. Spoon small mounds (1.5–2 tbsp each) of the mixture onto the tray. Flatten slightly into disks. Freeze for 1–2 hours until solid.
Dip in Chocolate:
Melt the dark chocolate chips and coconut oil in the microwave (30-second bursts, stirring each time) or in a double boiler.
Coat and Top:
Dip each frozen yogurt cluster into the melted chocolate, coating fully. Place back on parchment. Immediately sprinkle crushed nuts or keto granola on top.
Set:
Freeze again for 10–15 minutes until chocolate hardens. Store in the freezer or fridge.
