Garlic Butter Filet Medallions with Broccoli & Loaded Baked Potato
Ingredients:
3 beef filet medallions (or tenderloin cuts)
2 tbsp unsalted butter
2 cloves garlic, minced
1 tsp fresh or dried parsley
Salt & black pepper
1 large russet potato
1/4 cup shredded cheddar cheese
1 tbsp sour cream
1 tbsp butter (for potato)
1 cup broccoli florets
1 tbsp olive oil
Pinch of salt & garlic powder
How to Make It :
1️⃣ Bake the Potato:
Rub the potato with olive oil and salt, then bake at 400°F (200°C) for 45–50 minutes until crisp outside and fluffy inside. Slice open, fluff with a fork, and add butter, sour cream, and cheese. This loaded potato is your ultimate comfort food sidekick!
2️⃣ Steam or Roast the Broccoli:
Toss broccoli in olive oil, garlic powder, and salt. Roast for 15–18 minutes or steam until fork-tender. Perfectly cooked greens that make this a balanced, easy dinner idea!
3️⃣ Sear the Filet Medallions:
Season medallions generously with salt and pepper. Sear in a hot pan with butter for 3–4 minutes per side (medium rare), basting with garlic butter. These juicy medallions are steakhouse-level flavor, right from your kitchen.
4️⃣ Make the Garlic Butter Finish:
Add garlic and parsley to the pan butter at the end, spooning over the steaks as they rest. This rich, herb-packed finish turns your steak into a next-level dinner winner.
5️⃣ Plate & Serve:
Plate the medallions with the loaded potato and broccoli. Drizzle extra garlic butter over the top if you're feelin’ extra!
