Keto Peanut Butter Blossom Cookies Christmas Cookie Recipe
Keto Tips and Tricks:
I’ve used Lily’s and Choc Zero chocolate chips
Refrigerate the dough first to make it easier to roll them into balls
The most common “brown” sweeteners we’ve used are Sukrin Gold and Swerve Brown.
I rolled them in Monk Fruit (be careful if you use a sweetener with Stevia in it - they are more concentrated!)
Keto Peanut Butter Blossom Cookies are a fantastic treat for those following a ketogenic diet or anyone seeking a low-carb dessert option. This recipe utilizes almond flour instead of traditional wheat flour, significantly reducing the carbohydrate content while maintaining a soft and flavorful texture. A key ingredient in this recipe is the brown sweetener, which can be substituted with popular keto-friendly options like Sukrin Gold or Swerve Brown. These alternatives provide a subtle sweetness without the blood sugar spike caused by regular sugar. Rolling the cookie dough balls in monk fruit sweetener before baking not only adds a slight crunch but also enhances the sweetness naturally, making it an excellent coating choice. However, caution is advised when using sweeteners containing stevia, as they are more concentrated and can overpower the flavor if not measured carefully. Using peanut butter adds healthy fats and protein, essential for sustaining ketosis while delivering the rich taste cookie lovers crave. Refrigerating the dough before shaping ensures easier handling and helps the cookies keep their form during baking. Baking at 325 degrees Fahrenheit for 10 minutes followed by adding keto-friendly chocolate chips on top and baking for an additional minute ensures the chocolate melts perfectly without overbaking the cookies. These cookies make an ideal snack or dessert for the holiday season, especially Christmas, offering a guilt-free indulgence that fits seamlessly into a ketogenic or low-carb lifestyle. They provide approximately 187 calories per serving (two cookies), with only 3 grams of net carbs, making them suitable for keto diet plans. When selecting chocolate chips, Lily’s and ChocZero are reliable brands that use sugar alcohols and natural sweeteners to keep carbs low. Himalayan pink salt can be added if you wish to enhance the flavor further, balancing the sweetness and bringing out the nuttiness of the peanut butter. Overall, these Keto Peanut Butter Blossom Cookies combine simplicity with deliciousness, making them a must-try for anyone looking to enjoy festive cookies without compromising their dietary goals.
