Secret to tenderizing meats

The process is surprisingly simple. After washing your meat, lightly sprinkle baking soda on both sides. You can shake it straight from the box or use a small shaker for easier application. Let it sit for about 10 minutes—no longer, or you risk overdoing it. Afterward, rinse the meat thoroughly to remove all the baking soda, pat it dry with paper towels, and then cook and season as usual.

So, what’s happening behind the scenes? Baking soda raises the pH level on the surface of the meat, creating an alkaline environment. This helps break down proteins, tenderizing the meat fibers for a noticeably softer texture. It also neutralizes acidity, helping the meat retain moisture while absorbing flavors more effectively.

... Read moreMany home cooks seek foolproof methods to tenderize meat without compromising flavor or texture. Using baking soda is an effective and accessible technique that fits this need perfectly. When you sprinkle baking soda on meat, it increases the surface pH, creating an alkaline environment that alters protein structures. This process breaks down tough muscle fibers, making the meat noticeably more tender once cooked. It’s important to apply baking soda lightly and avoid exceeding the 10-minute window because longer exposure can lead to an unpleasant texture. After the resting period, rinsing thoroughly removes excess baking soda, preventing any residual taste while preserving the tenderizing effects. Drying the meat afterward helps achieve a perfect sear and allows seasonings to adhere better. This approach works great for various types of meat, including beef, pork, and chicken, especially for tougher cuts like flank steaks or chicken breasts that tend to dry out during cooking. Besides tenderizing, baking soda also helps the meat retain moisture by neutralizing natural acids, which improves flavor absorption from marinades and spices. For best results, pair the baking soda tenderizing method with other techniques such as marinating or slow cooking to optimize both texture and flavor. This handy hack is a simple addition to your kitchen routine that delivers juicier, more flavorful meat dishes without complex preparations. Give it a try to elevate your cooking and enjoy restaurant-quality tenderness at home.
