Thanks to Matthew McLaughlin, we have a written version of McConaughey’s somewhat unhinged (in the best way) tuna salad. The best part of this whole experiment is that you can add more (or fewer) ingredients to suit your taste.
Ingredients:
1/2 cup mayonnaise, plus more as desired
2 teaspoons white wine vinegar
1 tablespoon lemon juice
2 teaspoons wasabi paste
2 teaspoons Italian dressing
3 tablespoons finely chopped red onion
3 tablespoons finely chopped dill pickles
1/3 cup crispy jalapeño chips
1/4 cup chopped apple
1/2 cup fresh corn kernels
1/2 cup frozen peas
10 ounces tuna packed in olive oil, drained
Directions:
Stir mayonnaise together with vinegar, lemon juice, wasabi, and Italian dressing in a medium bowl until combined. Add in onion, pickles, jalapeño chips, apple, corn, and peas, and stir.
Fold in the tuna until well combined. Add more mayonnaise if desired.
Serve immediately or refrigerate until ready to serve.

One of the great things about this dish is its versatility—you can easily adapt the ingredients to fit your preferences or what you have available in your kitchen. For example, if you're not a fan of wasabi, fresh horseradish or a pinch of mustard can add a similar kick.
Using jalapeño chips adds a crunchy texture and a spicy note that complements the creamy mayonnaise base, while the diced apples bring a subtle sweetness that contrasts beautifully with the tang of vinegar and lemon juice. Incorporating fresh corn and frozen peas introduces a pop of color and freshness, making the salad visually appealing and nutritionally balanced.
From a practical perspective, this salad can be prepared ahead of time and refrigerated, making it an excellent option for meal prep or packed lunches. Adding more mayonnaise or adjusting the dressing allows you to control the creaminess and flavor intensity. Pairing it with whole-grain bread for sandwiches or serving it on a bed of greens can elevate it to a full meal.
In my experience, experimenting with ingredient quantities really helps to tailor the dish to your liking. Sometimes I use fresh dill instead of pickles for an herbal touch or swap red onion for green onion to mellow the bite. Overall, this recipe encourages culinary creativity while providing a delicious and satisfying meal, perfect for those looking for something quick, fresh, and pleasing to the palate.
