Vegan Taco Recipe
Here's a simple recipe for vegan tacos:
Ingredients:
2 cups soy crumbles or vegan textured vegetable protein
8 small corn tortillas
1 cup cooked and seasoned black beans
1 avocado, sliced
1/2 cup salsa
1/2 cup shredded lettuce
1/4 cup chopped cilantro
1 lime, cut into wedges
1 1/2 plus 1 Tbsp of vegetable stock
Instructions:
Vegan Taco with Faux Hamburger
Ingredients (serves 4)
*For the faux hamburger (vegan ground “meat”):*
- 2 cups textured vegetable protein (TVP) or soy crumbles
- 1 ½ cups vegetable broth (or water + 1 tsp bouillon)
- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tbsp taco seasoning (or homemade mix: chili powder, cumin, paprika, oregano, salt, pepper)
- 1 tbsp tomato paste
- 1 tbsp soy sauce (or tamari for gluten‑free)
- 1 tsp smoked paprika (optional)
*For the taco sauce (creamy):*
- ½ cup raw cashews (soaked 4 h or boiled 10 min)
- ¼ cup water
- 2 tbsp lime juice
- 1 tsp apple cider vinegar
- 1 tsp nutritional yeast
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper to taste
*Assembly:*
- 8 small corn tortillas (or keto‑friendly low‑carb tortillas if you want them keto)
- Fresh lettuce, shredded
- Diced tomatoes
- Sliced avocado or guacamole
- Fresh cilantro, chopped (optional)
Instructions:
1. *Prepare the faux hamburger:*
- Rehydrate TVP/soy crumbles in hot vegetable broth for 5 min, then drain excess liquid.
- In a skillet, heat olive oil over medium heat. Sauté onion & garlic until fragrant, ~3 min.
- Add the rehydrated TVP, taco seasoning, tomato paste, soy sauce, and smoked paprika. Mix well.
- Cook 5‑7 min, stirring, until the mixture is browned and flavorful. Set aside.
2. *Make the creamy taco sauce:*
- Blend soaked cashews, water, lime juice, vinegar, nutritional yeast, garlic powder, onion powder, salt & pepper until smooth.
- Adjust thickness with more water if needed. Taste and tweak seasoning.
3. *Assemble the tacos:*
- Warm tortillas in a dry skillet or microwave (10 sec).
- Fill each tortilla with the faux hamburger mixture.
- Drizzle the creamy cashew sauce over the top.
- Add lettuce, tomatoes, avocado, and cilantro as desired.
- Serve with extra sauce on the side for dipping.
instructions:
Warm the tortillas in a dry pan over medium heat until they're slightly crispy and pliable, about 30 seconds on each side.
Spoon black beans onto each tortilla, spreading them evenly.
Add sliced avocado on top of the beans.
Spoon salsa over the avocado.
Sprinkle shredded lettuce and chopped cilantro over the salsa.
Serve with lime wedges on the side, for squeezing over the tacos as desired.
