Herb Roasted Chicken with Pumpkin Mash and Greek Salad
Ingredients (4 servings)
- 4 chicken thighs (bone‑in, skin‑on)
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt & pepper to taste
- Fresh lemon juice (optional, 1 tbsp)
Instructions:
1. Preheat oven to 400 °F (200 °C).
2. Pat chicken dry, rub with olive oil, then season with rosemary, thyme, garlic powder, paprika, salt & pepper.
3. Place thighs skin‑side up on a baking sheet.
4. Roast 35–40 min until internal temp reaches 165 °F (74 °C) and skin is golden.
5. Optional: drizzle lemon juice before serving.

Instructions:
1. Boil pumpkin cubes 15–20 min until tender.
2. Drain, mash with butter, cream, nutmeg, salt & pepper.
3. Adjust texture with a splash of broth if needed.
