I Love To Make This Chicken Chopped Salad Weekly
This flavorful chicken salad is my go to when I want something fresh and filling. I make this weekly and my family love when I do!

Ingredients
-1 pack chicken tenderloins
-1-2tsp olive oil to grease your pan
-(chicken seasoning) 1-2tsp soul food seasoning
-1 romaine lettuce
-1/2 cucumber
-6 cherry tomatoes
-1/3 diced purple onion
-1/2 cup whole peperoncini
-1/2 cup shredded cheese
-1/2 cup croutons
-1/3cup ranch salad dressing
Steps
Season your chicken on both sides with soul food powder seasoning
In a large pan, on medium heat add your olive oil to grease the pan lightly
Cook chicken for 6mins on each side (internal temp should be 165)
Remove & let rest on the side
Cut the end of your lettuce and discard the end piece
Chop the rest of your lettuce into big chunks, wash and pat dry & add into a large salad bowl
Cut your washed cucumber into rounds and dice your purple onions
Add both into bowl along with cherry tomatoes & peperoncinis
Top with cheese, croutons, ranch dressing & chicken

Tips
-If you’re meal prepping don’t add your ranch, chicken, cheese or croutons in yet. This will help so it doesn’t get soggy and give you the best fresh salad taste!
-If you can’t find Soul Food Seasoning this is their ingredient list: salt, pepper, onion, garlic, paprika, and red pepper
