Lemon Blueberry Cake Cookies
Ingredients
Cake Batter Mix
* Lemon Cake Mix
* 2 Eggs
* 1/2 Cup Vegetable Oil
* 1 cup of Blueberries
* 1/4 cup of blueberry sauce
* Lemon zest
Blueberry Sauce/Jam
* 1 1/2 cup blueberries
* 1/4 Cup Sugar
* Lemon Zest
* 1 Tablespoon Lemon Juice
* 2 Tablespoon Water
Blueberry Buttercream Frosting
* 1/4 cups Blueberry Sauce
* 1 Cup Salted Butter
* 3 cups Powdered sugar
* 1/4 cup cream cheese
* Splash of vanilla
* 1 tablespoon of milk
Instructions
1. Preheat oven to 350F. Using a hand mixer or stand mixer combine the cake mix , eggs and oil in the bowl. mix for 2-3 minutes until combined.
2. Add Blueberries and Blueberry sauce Mix it lightly so you still get a bit of a swirl in your cookies with the sauce
3. The dough will look sticky but that’s how you know it’s just perfect scoop with your cookie scoop onto your pan and put in the oven for 8-10 minutes or until golden brown around the edges remove and let cool.
To assemble the cookies, pipe the frosting onto each cookie and enjoy 😊

Blueberry Sauce
1. For the blueberry sauce use medium sized pan add in your blueberries, water, sugar, lemon juice and lemon zest on medium heat. Once boiling peak smash down the berries with a fork and continue letting it boil for about 3-5 mintues take off and let cool it will turn into a jam like texture THATS OK! 😊
Buttercream Frosting
1. As for the buttercream beat butter and cream cheese until smooth once smooth add about 1/4 cup blueberry sauce and a splash of vanilla and mix. Add powdered sugar and Milk.
