Avocado 🥑 Tomato 🍅 & Onion 🧅 Salad 🥗
Ingredients:
* 2 Ripe Avocados, Sliced
* 1Cup of Cherry Tomatoes, Halves
* 1/2 Small Red Onion, Thinly Sliced
* Tablespoon of Extra Virgin Olive Oil or Sesame Ginger Dressing
I’ve found that this Avocado, Tomato, and Onion Salad is a perfect go-to whenever I want something light but satisfying. The creaminess of ripe avocados pairs so well with the juicy burst of cherry tomatoes and the slight crunch and bite from the thinly sliced red onions. A great tip I’ve picked up is to leave the avocado slices slightly chunky rather than mashing them, to keep the texture varied and interesting. Using a good quality extra virgin olive oil really makes a difference in flavor, but sometimes I love switching it up with a sesame ginger dressing for an Asian-inspired twist. Lastly, using fresh, ripe avocados is key; if you’re not sure, gently press the skin—if it yields slightly, it’s perfect. Overripe avocados, however, can make the salad feel heavy and mushy, so timing is everything.
