... Read moreFall is my favorite time for cozy crafts and delicious treats, and nothing beats the satisfaction of harvesting my own pumpkin seeds! When I cut open those beautiful pumpkins – whether it's a vibrant orange one or a unique grey-blue variety – that first glimpse of all those seeds inside always gets me excited. It's truly amazing how a simple pumpkin can provide so much fun, and a super tasty snack. I'm going to walk you through my super easy process from seeing those seeds to having a crunchy, roasted treat. Getting Started: The Great Pumpkin Reveal First things first, grab your pumpkin! Whether it's a classic orange pumpkin or one of those charming grey-blue pumpkins, the process is the same. I always start by finding a stable surface and carefully cutting around the stem using a sharp knife. When that pumpkin is finally cut open, and you see all those beautiful seeds visible inside, that's when the real fun begins! Scooping & Separating Next up, it’s time to get your hands a little messy! I use a sturdy spoon to scoop out all the seeds and stringy pulp. Don't be shy – get everything out! This is the part where you really feel like you're harvesting. Once everything is scooped out, I usually put it all in a colander in the sink. It makes the next step much easier. Cleaning Your Treasure Now for the cleaning! Under cold running water, I gently separate the seeds from the stringy pulp. It might take a few minutes of rubbing and rinsing, but trust me, it’s worth it. You want those seeds to be as clean as possible before drying. After a good wash, I spread my clean seeds out on a few layers of white paper towel. This helps absorb the excess moisture and gets them ready for drying. I usually let them air dry for a few hours, or even overnight, turning them occasionally on the paper towels. Seasoning for Flavor Once your pumpkin seeds are nice and dry, it's time to add some magic! This is where you can get creative. I love a simple sprinkle of salt, but sometimes I'll add a dash of chili oil for a kick, or even some garlic powder and paprika. Just toss them in a blue bowl with a spoonful of oil and your chosen seasonings until they're all evenly coated. Every time I do this, I think about all the delicious possibilities! Roasting to Golden Perfection Finally, the moment of truth – roasting! I preheat my oven to about 300-325°F (150-160°C). Then, I spread the seasoned seeds in a single layer on a baking sheet lined with aluminum foil. This prevents sticking and makes cleanup a breeze. Roast them for about 20-30 minutes, stirring occasionally, until they're golden brown and perfectly crispy. Keep a close eye on them, as they can go from perfectly roasted to burnt very quickly! And just like that, you've turned a simple cut-open pumpkin into a crunchy, delicious, and healthy snack! There's nothing quite like the taste of homemade roasted pumpkin seeds. They're perfect for snacking, adding to salads, or even topping your favorite soups. Happy harvesting and happy snacking!
