3. Mix gently until just combined. Do not over mix.
4. Rest batter five to ten minutes.
5. Heat a skillet over medium heat and butter the pan.
6. Cook pancakes until bubbles form, flip once, and cook until golden.
7. Serve with butter and maple syrup.
