There’s something so satisfying about those rich, beefy flavors and perfect grill marks. If you’ve ever wondered how to grill a T-bone steak like a pro, or what temperature to grill T-bone steak to get it just right, I’m excited to share my favorite method that consistently delivers amazing results on the BBQ. First things first, preparation is key! I always start by taking my T-bone steaks out of the fridge at least 30-45 minutes before I plan to put them on the grill. This helps them come closer to room temperature, ensuring a more even cook. Then, I give them a generous seasoning with coarse sea salt and freshly cracked black pepper. Some people like to add a little olive oil rub, but I find a good quality steak really shines with just salt and pepper. Don't be shy with the seasoning – it makes a huge difference! Now for the grill setup and temperature, which is crucial for a T-bone steak on BBQ. I typically set up my grill for two zones: one high heat direct zone and one lower heat indirect zone. I aim for an initial high heat of around 450-500°F (230-260°C) for that beautiful searing. This initial blast of heat is what gives you those coveted grill marks and a fantastic crust. Once the grill is screaming hot, it's time to get cooking! I place my T-bone steak directly over the high heat. For a thick, 1.5-inch T-bone, I usually sear it for about 2-3 minutes per side. After searing both sides, I move the steak to the indirect heat zone to finish cooking. This is where you really control the doneness, and it’s especially important if you’re aiming for something like grilling T-bone steak medium well. So, how long to cook a T-bone steak on the grill? This really depends on your preferred doneness and the thickness of your steak, but a meat thermometer is your best friend here. For medium-rare, I pull it off around 130-135°F (54-57°C). For medium, it's 135-140°F (57-60°C). If you're going for grilling T-bone steak medium well, aim for an internal temperature of 145-150°F (63-65°C). Remember, the steak will continue to cook a little after you take it off the grill due to carryover heat, so pull it a few degrees before your target. For a typical 1.5-inch T-bone, the total grill time, including searing, might be anywhere from 10-15 minutes depending on your grill and desired doneness. After all that effort, the most important step often overlooked is letting your grilled T-bone rest! I transfer the steak to a cutting board, tent it loosely with foil, and let it rest for at least 5-10 minutes. This allows the juices to redistribute throughout the meat, making every bite incredibly tender and juicy. Trust me, following these steps will elevate your grilled T-bone experience. It’s so rewarding to slice into a perfectly cooked steak you made yourself. Give it a try next time you fire up the BBQ, and let me know how it goes!
