Cheese Dip

Mexican Restaurant-Style Cheese Dip 🧀🌶️

If you’ve ever wondered how Mexican restaurants get that smooth, creamy queso… this is it. Super easy and perfect for chips, tacos, nachos, or anything that needs some cheesy goodness.

Recipe:

• 12 oz Evaporated Milk

• 4 oz Diced Jalapeños

• 1 lb Land O Lakes White American Cheese (from the deli)

• 1/2 lb Pepper Jack Cheese (from the deli)

Add everything to a slow cooker and cook on LOW for about 3 hours.

Stir every 35–40 minutes until everything is smooth and melted.

If you want the dip thinner, let it cook longer and add a little milk until it reaches the consistency you like.

Serve with tortilla chips and enjoy!

Using a slow cooker to melt the combination of Land O Lakes White American Cheese and Pepper Jack Cheese infused with spicy diced jalapeños creates that authentic creamy texture and gentle heat that defines classic queso. A key tip is to use evaporated milk instead of regular milk or cream; it helps achieve a rich yet perfectly smooth consistency without separating or curdling during cooking. Stirring every 35 to 40 minutes encourages even melting and prevents the cheese from clumping. For those who prefer a thinner dip, adding a splash of milk gradually while cooking extends the perfect dippable texture. In my experience, using fresh deli cheeses rather than pre-shredded packets makes a noticeable difference in melt quality and flavor. Also, after cooking, letting the dip rest before serving can help all the flavors meld wonderfully. This versatile cheese dip isn’t just for tortilla chips. It’s excellent drizzled over tacos, stuffed into burritos, or even mixed into scrambled eggs for a cheesy twist. If you like extra spice, adding more jalapeños or a pinch of chili powder can elevate the heat without overpowering the cheese. Lastly, the slow cooker method frees you from constant attention, making it fantastic for parties or casual weekend snacking. Just set it on low, check and stir occasionally, and you’ll have a show-stopping queso dip ready to enjoy with friends and family.
