Okay, so you've seen my recipe for this amazing loaded ham and potato soup, and let me tell you, it's become a staple in my kitchen! When I first tried making a quick ham and potato soup with milk, I was a little intimidated, but this recipe truly delivers on both speed and flavor. It’s perfect for those busy weeknights when you still want a hearty, homemade meal. One thing I've learned that makes this soup even quicker is prep. If you have leftover ham from New Year's or any holiday, that's already a huge head start! But if not, grabbing some pre-diced ham from the deli can save you precious minutes. Also, while peeling potatoes can be therapeutic, if I'm really pressed for time, sometimes I'll opt for smaller, thin-skinned potatoes that don't need peeling, or even pre-chopped frozen potatoes in a pinch – just adjust cooking time slightly. The key to that loaded ham and potato soup goodness is getting those potatoes tender quickly, so dicing them into evenly sized, smaller pieces helps a lot. Let's talk about the creamy magic! My recipe uses half and half or heavy cream and milk, which gives it that luscious, comforting texture without being overly heavy. If you're looking to lighten it up a bit, using just milk (whole milk works best for richness) instead of half and half is totally fine, though it might be slightly less thick. For those who can't do dairy, I've had success substituting unsweetened full-fat coconut milk or a good quality oat milk for a surprisingly creamy result, just make sure it's the plain variety so it doesn't alter the flavor too much. The flour roux at the beginning is crucial for thickening, so don't skip that step! It helps create a stable base for your dairy. And oh, the 'loaded' part! While cheese, bacon, and chives are classic, don't stop there. I sometimes add a dollop of sour cream or Greek yogurt right before serving for an extra tangy kick. A sprinkle of fresh parsley or even some crispy fried onions can elevate it too. The beauty of this loaded ham and potato soup is how versatile it is with toppings. A pro tip I picked up: when you're using the immersion blender to get that silky consistency, remember what I said about not over-blending! I learned the hard way once – overworked potatoes can indeed get gummy, and nobody wants that. Blend just enough to break down most of the chunks, leaving a few rustic pieces adds character. Also, don't be shy with seasoning. Taste as you go, especially after adding the ham, as its saltiness can vary. A little extra pepper or a dash of hot sauce can really make the flavors pop. This soup is fantastic on its own, but it also pairs wonderfully with some crusty bread for dipping or a simple green salad. It reheats beautifully too, making it perfect for meal prep throughout the week. Just add a splash of milk or broth when reheating if it's thickened too much. Seriously, this quick ham and potato soup with milk recipe is a keeper. It's warm, comforting, and surprisingly easy to pull off!
