✔️ 2.5 lbs bone-in short ribs

✔️ 2 tbsp olive oil

✔️ 1 onion (diced)

✔️ 1 carrot (diced)

✔️ 1 celery rib (diced)

✔️ 4 cloves garlic (minced)

✔️ 1/2 cup dry red wine

✔️ 1 3/4 cups low-sodium beef broth

✔️ 2 tbsp tomato paste

✔️ 1 can (28 oz) whole tomatoes

✔️ 1/2 teaspoon kosher salt

✔️ 1/2 teaspoon black pepper

✔️ 1/2 teaspoon dried oregano

✔️ 1/2 teaspoon dried basil leaves

✔️ 3 sprigs thyme

✔️ 2 bay leaves

✔️ Pinch crushed red pepper flakes

✔️ 1 lb. pappardelle or tagliatelle pasta

👀 How to Make It:

1️⃣ Sear short ribs & set aside.

2️⃣ Sauté onion, carrots & garlic.

3️⃣ Deglaze the pan with wine, then add tomatoes & broth, crush with potato masher.

4️⃣Add remaining ingredients.

5️⃣Return ribs, top with fresh thyme sprigs, & slow cook 2.5-3 hrs.

6️⃣Shred meat, mix with sauce, and simmer.
